Cold Brew vs Iced Coffee: What's the Difference?

They're both cold coffee, but they're made completely differently — and taste different too. Here's the breakdown.

Two different drinks

Cold brew and iced coffee are often used interchangeably, but they're completely different beverages made with completely different methods.

Iced Coffee

Iced coffee is hot-brewed coffee that's been chilled. You brew it the normal way — with hot water — and then pour it over ice or refrigerate it.

  • Method: Hot water extraction, then cooled
  • Time: Minutes to brew
  • Flavor: Bright, acidic, with the full flavor of hot-brewed coffee
  • Body: Lighter, more refreshing

Cold Brew

Cold brew is steeped in cold water for a long time. No hot water ever touches the grounds. The long, slow extraction at low temperature pulls different compounds from the coffee.

  • Method: Cold water steeping, 12–24 hours
  • Time: Half a day or more
  • Flavor: Smooth, mellow, low acidity, with chocolatey and nutty notes
  • Body: Full, syrupy, rich

Why they taste different

Hot water extracts acids, oils, and aromatic compounds quickly. Cold water extracts more slowly and selectively, pulling fewer of the acidic and bitter compounds. That's why cold brew tastes smoother and less acidic.

Which should you choose?

  • Iced coffee if you want the bright, complex flavor of hot coffee but cold. It's faster to make and highlights the coffee's natural acidity.
  • Cold brew if you want something smooth, strong, and mellow. It's less acidic (easier on sensitive stomachs) and makes a great base for milk drinks.

A quick cold brew recipe

  1. Combine 1 part coarse-ground coffee with 4 parts cold water in a jar.
  2. Stir gently, cover, and refrigerate for 16–18 hours.
  3. Strain through a fine mesh sieve or coffee filter.
  4. Dilute with water or milk to taste (cold brew concentrate is strong!).

Both drinks have their place. The best one is the one you're in the mood for.
